A trained pastry chef, I've worked in some fantastic kitchens surrounded by incredibly inspiring foodies - mainly at Observer Food Monthly Award winner Altrincham Market, where I managed Mediterranean style unit Little Window and spent another large portion of my time covered in flour making sourdough and pizzas for Honest Crust. Now down in London I'll mainly be found plotting my latest menu for MIMOD!
For me it's really always been about breakfast. A hotel breakfast buffet is my idea of a great time, and I'll always be the one setting my alarm on holiday just to stuff my face with cheese and ham and pastries and omelettes and beans and hash browns and fruit and... you get the picture. I settle into my pillow at night imagining my crusty sourdough with home-made jam, or banana pancakes topped with pecans, or rashers of sizzling bacon - all just a short eight hours snooze away. And you know what's so great about all that food? Not the time of morning, not the fact that you're just waking up and getting ready for a whole new day - it's that somehow, somewhere breakfast has become it's own cuisine. And that, my fellow brunch-enthusiast, is the little circle of the eclectic food scene where MIMOD's Kitchen belongs. Granola isn't just for 8am, and eggs can be enjoyed at any time of the day - all the better if there's a little bit of prosecco on the side in fact.
So come and have your eggs and croissants as the night's pulling in and savour it for what it is - just damn good eating.
